Spring Flowers Chia Jam Cookies

Chia Jam

Ingredients

  • 2 cups raspberries (or strawberries if that’s your “jam”)
  • 3 tablespoons Sunwarrior Chia Seeds
  • 3 tablespoons water
  • 1 teaspoon vanilla extract
  • 1 teaspoon maple syrup

Directions

Place all ingredients into a blender and pulse for 40 seconds. Transfer for a mason jar or air tight container. Place in fridge for set for 1 hour.

Cookie Recipe

Ingredients

  • 2 cups flour
  • ½ teaspoon sea salt
  • ¾ cup vegan butter
  • ½ cup coconut sugar
  • 2 tablespoons almond milk
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 350 and line a cookie sheet with parchment paper
  2. Mix flour and sea salt together with whisk then mix in softened vegan butter until your mixture is creamy. Mix in sugar and then slowly add almond milk and vanilla and mix until just combined while being careful not to overmix.
  3. Roll the dough and then cut out even flower shapes. For half of the pieces, use a smaller circle-shaped cookie cutter to create the center.
  4. Bake for 5–10 minutes or until lightly browned
  5. Transfer cookies to a cooling rack and let cool
  6. Using your chia jam, spread 1 tablespoon on each cookie and top with secondary cookie with the whole in the center. Sprinkle with icing sugar (optional)
