Chocolate Protein Balls

On-the-go snacks don’t have to be complicated or filled with stuff you don’t want to eat. These chocolate protein balls simplify life so you time to live.

If you are an on-the-go type person like myself, then you know reaching for protein bars is the quickest way to keep that energy level up. Most protein bars provide a good source of protein and carbs, and they sustain your appetite, but they can also be packed with added sugars and preservatives. I think that it’s hard to find a good balanced bar— especially if you have any food allergies. When looking for a protein bar, I need it to be vegan (well, mostly brown rice protein since I have many allergies) and gluten free. I also look for lower sugar and lower carbs, but a lot of times you can’t get both; it’s always one or the other. That’s why I started making my own protein bars at home. Most recipes are quick and easy, not to mention cost efficient! This recipe was created using only what existed in my cabinets. They actually turned out to be quite tasty!

protein balls_picAdd dry ingredients (protein, cocoa powder, and flax meal) to blender.

Melt the almond butter and honey (agave) until softened and melty. This makes it easier to work with.

Add the almond butter-honey mixture and milk to the blender, blend until the mixture forms into a dough-like consistency

Form into tablespoon size balls and place on baking sheet

Optional: roll balls into cocoa powder, coconut flakes, or brown rice crisps

Store in fridge until you are ready to eat them. They should last about a week in the fridge, but they are too tasty to survive that long!
