Raw Butternut Squash Soup
Everyone loves a good cup of soup, but have you tried a raw soup? Heat can destroy many of the more fragile nutrients, like vitamin C, enzymes, and many antioxidants. Try this refreshing and filling recipe for a good dose of fiber, vitamin C, B6, folate, and numerous beneficial phytonutrients.
- 3 cups butternut squash, peeled, seeded, and chopped
- 1 mango, cubed
- 2 teaspoons curry powder
- 4 cups fresh orange juice
- ½ cup honey, dates, or maple syrup
- Plantain or banana, sliced
- ½ cup mint, chopped
- A pinch jalapeno, minced
- 1 mango, seeded, peeled, and diced
In a blender combine the butternut squash, mango, curry, orange juice, and honey, dates, or maple syrup and blend until creamy. Garnish with plantain or banana slices, mint, jalapeno, and mango. Serve immediately.
