Vegan Maple Bacon Donuts

There aren’t many healthy indulgences that are just plain fun to eat, but these vegan maple bacon donuts are light and fluffy sweet-spot hitters.

Yes, you heard me, Maple Bacon Donuts. That’s just a righteous combination. Now, before you get scared, there isn't actually bacon on these donuts, and they are baked, not fried. These glorious donuts have the sweetness of maple mixed with the saltiness of coconut bacon. Yes, coconut bacon. The best invention since, well . . . ever.

A combination of flours guarantee the donuts come out light and fluffy. The traditional spices of fall give these donuts a rich flavor. Make sure the apple sauce is unsweetened. Sweetened applesauce makes it extremely sweet when combined with the glaze.

I purchase my coconut bacon at my local organic store. Most organic stores should have a few different brands of coconut bacon. It doesn’t really matter which one you choose; they are all equally as delicious. Perhaps don’t opt into buying the BBQ or zesty flavors of coconut bacon as it may add a funky flavor to your donuts, but you can always experiment!

I incorporate two different glazes for the donuts. I’ve used both glazes, and they are equally delicious. In the picture, I used glaze # 1. The coconut butter adds a richness and glossiness to the donuts. Glaze # 2 is rich and delicious. The pecan and almond glaze compliments the lightness of the donut.

Maple Bacon Donuts

Ingredients:

  • 1 and 1/2 cups almond meal
  • 1/4 cup oat flour
  • 2 tablespoons coconut flour
  • 2 tablespoons flax meal
  • 4 tablespoons water
  • 2 tablespoons organic apple sauce
  • 2 tablespoons melted coconut oil
  • donut 1_pic1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/4 cup unsweetened nondairy milk (I used full fat coconut milk)
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla or maple extract
  • 1 cup coconut bacon (for garnish only)

Glaze ingredients:

  • 1/4 cup raw cashews
  • 1/4 cup melted coconut butter
  • 2 tablespoons melted coconut oil
  • 2 tablespoons water
  • 1/4 cup maple syrup
  • 1 teaspoon real vanilla extract or maple extract

Glaze 2 Ingredients:

  • 1/2 cup pecans
  • 1/4 cup almonds
  • 1/4 cup maple syrup
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt

Directions:

donut 2_pic1.) Preheat oven to 350. Grease a donut tray with coconut oil, set aside

2.) Combine 2 tablespoons of flax meal and 4 tablespoons of water in a small bowl. Whisk for 1 minute and set aside for 5 minutes or until mixture has thickened. This will be your egg binder.

3.) Combine flax mixture and all remaining ingredients together. Fill each cavity until it is 3/4 full. Bake for 15–20 minutes. Let cool in pan for 10 minutes and then transfer them to a wire rack to cool.

4.) For the glaze: Combine all ingredients in a high speed blender. Dip each donut in the glaze and top with coconut bacon.
